Recipe: Green Lentil and Vegetable Chilli

Made this very tasty chilli for my family last weekend- went down a storm! Dad had thirds, lol! Made it as it's very healthy, for part of my new diet/ healthy eating regime. I'm basically at the gymn 5 days a week, and i'm living mostly off soups, salad, wholegrain cereal, fruit- and then a balanced healthy evening meal. Got to be a good mix of protein, carbohydrates and vegetables- which is what this is. Was doing really well on this diet until yesterday- when my boyfriend suggested we go and get a Toby Carvery- what a disaster! Almost 5 pounds gained back just from 1 day! Just not fair really. This dish is also quite nice with a bit of soft goats cheese crumbled on top.

Green Lentil and Veg Chilli (serves 4)

2 tbsp olive oil
1 red onion, diced
2 garlic cloves, crushed
2 celery sticks, diced
1 red chilli, finely diced
Big handful fresh coriander, chopped
2 carrots, peeled and diced
250g chestnut mushrooms, diced
1 courgette, diced
1 pepper, diced
250g green lentils
1 litre vegetable stock
1 tin chopped tomatoes
1 tsp marmite
2 tsp cumin
1 tsp paprika
Salt, sugar and pepper to taste
Coriander for garnish

1. Sautee the onion, garlic, celery, chilli and coriander in the olive oil for 5 minutes. Add the mushrooms, courgettes, pepper and carrots and cook for a further 5 minutes. Add all the other ingredients and cook covered, on a medium heat, for 40 minutes, stirring occasionally.
2. Remove the lid, and cook on a high heat for about 5-10 minutes- or until thickened. Season to taste, and garnish with fresh coriander. Serve!

Two fine chaps aid my path to EV

                                                                            
I think I'm getting restless and I certainly confess to a huge element of eco envy, having recently spent time with a couple of chaps who are passionate about their electric cars....and...wait for it.....can also charge them up from energy that has been harnessed by their solar panels.

Yes, no longer satisfied with reducing my rubbish and fighting the good fight to keep our energy usage down, my mind has been wandering in the direction of other ways in which we can reduce our carbon emissions.





And with petrol prices going up and strikes being threatened, I can't help but think about the future of my car.  And herein lies my quandary.


I have a six year old 1.4 VW, which only does 2,500 miles per year.  It's now costing me over £60 in petrol to fill up the tank and for that I get around 300 miles.  I am not a heavy user.  I try to restrict my journeys, walk when I have time and use my bike much more in the summer.  So this car of mine should last me for another ten years at least.  However, that's a decade of higher fuel costs and constant carbon emissions.

But the cost of switching now seems too much of a barrier, so it was interesting to have the opportunity to pick the brains of broadcaster Mark Goodier, who has been driving electric cars since 2003 when he first leased a Ford Think. I caught up with him at the British Gas stand at this year's Ideal Home Show.

Mark's own switch to EV was very much prompted by the congestion charge in London and leasing the Think meant that not only did he save on the urban driving charge, but also insurance and service costs went down. With no road tax to pay and running on electric power, annual motoring costs became much cheaper still.  

Mark now drives a Nissan Leaf and a year ago he also upgraded his home with Solar PV. Thanks to the feed-in tariff he can now effectively run his car from free energy sources. This is backed up by his subscription to British Gas' green Energyshare tariff, which uses alternative energy, so either way he ensures his car runs 100% free of emissions.

I have to confess, he was doing a really good job of convincing me and we soon started to estimate projected savings if I made the switch.

Without exact data it's tricky but even with estimated petrol costs at £2,500 per year, Mark calculated that the equivalent cost in terms of electricity would be around £500.  So over just five years, that could mean a saving of £10,000 alone. Extrapolate that to 10 years and we're looking at £20,000.

Now, I am starting to get excited.  Throw in free Road Tax, cheaper insurance and service costs and we could notch that figure up by a couple of thousand pounds.  Suddenly, it does make the switch to an EV more attractive.

And then there's the thought of never having to visit a petrol station ever again.

Now that's heaven!

Seriously, if I had the cash, I'd be going on a test-drive and would be choosing the right car for me right now!

But I don't have that money and realistically I've got more pressing issues on the domestic front, such as how we can turn our 3 bedroom semi into a TARDIS to accommodate our everyday living requirements.  That's where we need to spend our cash for the foreseeable future.

However, I am not going to take my sights of making the switch and if I am honest, it's trading in my husband's car that would bring us most benefits, both financially and from a carbon saving perspective. Swiftly approaching 100,000 miles on the clock, in a car that is also just six years old, it illustrates how his mileage easily exceeds mine.

So I reckon we'll sit tight for a couple of years whilst the next phase of the market settles and wait for the right car to come along.  Mark Goodier predicts that we will see more accessible options by 2013/14, which really isn't that far away.  

By then, he also forecasts that we will see faster charging points that achieve full charge within just 25 minutes.  Private charging points, such as those provided by British Gas, will be bolstered by a wider network of public charging facilities, including supermarkets and motorway stations.  Chains such as Little Chef are already committing to installing facilities for its customers.

We will also see inductive chargers being installed in parking bays, which will make charging electric vehicles even more streamlined.  And as for the cars themselves, he suggests that as well as prices moving in line with petrol vehicles, there will be options that will enable the customer to purchase the car but lease the battery.  Meanwhile he predicts that petrol models will become more efficient too.

It really feels that the electric vehicle market is starting to pick up pace, and for the first time I am beginning to feel that the next time we trade in one of our cars, we will be looking at an electric alternative. The only thing that isn't clear is which car that will be or whether by then, we will have become a one-car family.

So, can you see why I'm getting restless?

Having had the chance to talk to Mark Goodier, I am now convinced that EV is the way to go. But the observant ones among you will have spotted my mention of two chaps. Yes, it's true, I also had the delightful opportunity of finding out more about the actor\presenter Robert Llewellyn's experiences too, another strong advocate who I met at a campaign launch party.

Transition Town opportunity for Bury St Edmunds



If you are interested in any element of sustainability, resource efficiency or community development in Bury St Edmunds, I suggest putting 15th May in your diary and heading along to the Fox Inn (pictured above), where you will find out more about how Bury can become a Transition Town.

Transition Towns have been in place since 2006, founded by Rob Hopkins, who created the first community in Totnes, Devon. Now there are over 1000 similar initiatives in 34 countries, all seeking to develop a more sustainable and resilient society, which strengthens local skills and resources in order to become less dependant on a fossil-fuel based culture.

Proposed by county councillor Mark Ereira, the Bury St Edmunds initiative will have the opportunity to follow in the footsteps of the more established groups in the East of England including Suffolk's Sustainable Bungay, Greener Framlingham, Transition Lavenham,Transition Ipswich and Greener Sax.  All it needs is the support of local residents, local businesses, entrepreneurs and community innovators to kickstart the action.  The meeting held on 15th May will be the first step to see if this can happen.

Although I won't be able to attend during the evening (due to a prior engagement with another Suffolk transition group), I fully support the launch of a local group and I have already committed to developing ideas that will help reduce Bury St Edmunds' waste footprint both within the community and the business sector.

My fantasy landfill bin: please vote for it!


I'm afraid I could resist no longer.  Having admired the very pretty and funky designs that have been entered into Brabantia's 'Design your Bin' competition, I finally succumbed to submitting my own entry.

My urge to 'tell it like it is' in the world of  pedal bin design led to a momentary lapse of 'what the hell' today and with a few flicks of the mousepad, my entry 'Off to Landfill' was live and kicking on the competition website, featuring a photo taken at Suffolk's Foxhall landfill site back in 2008.

I admit it's not the prettiest of designs.  It's probably the most rubbish design you'd ever find on a bin, but then, literally that's the point.  Cheeky I know, but it does tell the story of where rubbish ends up.
 
So, to all my waste-busting pals out there, if you've got a few minutes, I'd very much appreciate your vote.  Just click here to go straight to my bin.

Recipe: Traditional Chicken and Vegetable Casserole


This is a really basic casserole that is always a staple in my flat. It always makes exactly the right amount for two, it's really comforting, it's got potatoes in there so it's filling enough not to have to have mash or bread with it, and it's just scrumptious. I think everyone has a dish that they cook often, because they normally have all those ingredients in the fridge/cupboards, and this is one of mine!

Chicken and Vegetable Casserole (serves 2)

50g butter
1 white onion
1 clove garlic
2 leeks
1 large chicken breast, diced
100ml sherry
1 tsp dried rosemary
500ml vegetable stock
2 tsp lemon juice
1 large potato
2 carrots
2 tsp bisto gravy granules
Salt, pepper and sugar to taste
Chopped fresh parsley for garnish

1. Preheat the oven to 180C. Cook the onion, garlic, leeks and chicken in the butter in a casserole dish for 10 minutes, stirring often. Add the sherry and rosemary, and cook for a further 5 minutes. Add the vegetable stock, lemon juice, carrots, and potatoes, cover with the lid, and cook in the oven for 1 hour.
2. Remove casserole from the oven, add 1 tsp of bisto, stir until well combined, and return to the oven for a further hour.
3. Remove from the oven, add another tsp of bisto, and cook on the hob, stirring often, until the casserole has thickened enough. Garnish with some freshly chopped parsley and serve!

Bath Treatments for smooth skin.


Bath Treatments. There are some techniques to make your skin soft and smooth. Before taking bath follow this method. After taking bath you can see the difference of your smooth skin. Follow the tips below for soothing bath treatments.
Stress Relief
Add three cups of very strong chamomile tea. Add to bath water. Chamomile is soothing, healing properties that ease away tension.
Oily Skin
Add to bath water any combination of citric fruits, such as lemons, oranges, and grapefruits. Citric acids kill bacteria, remove impurities, and dry up excess oil. It is the ultimate aroma therapy, and a great way to use overripe fruits.
Dry Skin
Add baking soda to bath water to moisturize skin.
Fight dryness by adding ten drops of rose oil under running water. If you want true luxury, add some rose petals. Rose oil hydrates skin, is a wonderful scent, and helps prevent spider veins. Oil and water don't always mix well. So, it might be necessary to add a little milk to help them to diffuse better.
Skin Softener
Mix together three cups uncooked oatmeal, two cups wheat bran, and 1/4 cup aloe vera gel. Spoon into a fine mesh cheesecloth or to a knee-high nylon sock. Add to bath. After soaking, use ibag to cleanse skin. Brew ten ginseng tea bags in a large teapot. Pour into bath. Ginseng helps soften, tone, and refine skin, and it fights aging. Add a package of Jell-O to a warm bath. Sit in the tub for at least fifteen minutes.
Anti-bloating
Mix two teaspoons ginger with two teaspoons dried mustard. Add to bath. The ingredients are perfect for menstrual bloating and discomfort.

Recipe: Gazpacho


For those of you that don't know, Gazpacho is a traditional spanish vegetable soup- that is served cold. Sounds like a strange dish, but it is absolutely delicious, healthy and refreshing. I served these as part of a canape night- had my first ever paid canape job the other day!! It was so exciting and I think everything went down really well. I was only left with 7 canapes after making 200 of them, so im guessing everyone liked the food. Nick made me some business cards too, I feel like a "real adult" now that I have business cards! This recipe works very well just as a bowl of soup,with some nachos on the side, not only just as canapes- when making it as a soup or starter, you dont need to add the water. The water is needed in the canape mix so that it's a thin enough texture to drink from the shot glasses.

Gazpacho (makes 40 shots)

Ingredients:

1/4 Red onion
1 Cucumber
500g Ripe Tomatoes
1 Clove of Garlic
1 red pepper
200ml tomato juice
200ml water
2 tbsp cider vinegar
2 tsp sugar
Lots of salt and black pepper to taste
Fresh basil for garnish

1. Roughly chop onions, cucumber, tomato and garlic. Deseed the pepper and roughly chop.
2. Place all of these ingredients in a blender, and blend until completely smooth. Since this recipe makes a lot, liquidise the ingredients in batches, depending on the size of the blender. You may need to add more water, add as much as you need until you have a “shot-drinkable” consistency.
3. Season to taste, and chill in the fridge for at least 20 minutes. Serve with some freshly chopped basil leaves.

#22) WHAT U EAT & what is eating U-makes U FAT

This past week was interesting, let me tell you why.  I hired a new yard worker, college kid, from a local college, have hired these kids for the past 20 years and have probably had 15 or so work for me.  They have all been really good hard working guys.  Well last week I get a new one, he is 6ft tall and 320 lbs., a strong kid but not strong enough to pack around that extra 120lbs of excess weight and really do the job on my property.  He is 21 years old and in the middle of our yard I go into a consultation with him and I learn his parents and all his siblings are obese, his dad had had a stomach bypass surgery for weight loss.  When I asked my new worker what he thought of that he replied, "well, it sounds like the easy way to go..."  In other words he approves of that approach, easier he determines then going on a diet.

I have done weight loss for over 20 years and I can read minds, so I know when I have been told the real truth to my questions or whether I am being told what someone wants me to hear.  So I ask a barrage of questions and what I glean is that at age 18 he was active in high school sports and weighed in at 220 on the football field, he said he felt fit and he was an asset to the team.  But 3 years later he stands in front of me with a gain of 100lbs, I pull out my calculator and compute that to be around 33lbs a year of weight gain.

But here is the problem, this big strong kid who only 3 years ago was a high school athlete, has extreme difficulty to walk the steep stairs (50 steps) from my yard to the house above.  The same steps that I sprint up and down 5x every day that I come back from a 4mile run.  Then I watch and see that he is fatigued during the hour and half mow of the yard and I am thinking, how is he going to get up the stairs to his car??

On his next  work day I talk with him about his weight and about his diet and about the health risks and I educate him on the fact that he did not "inherit" his condition from his parents (he is convinced it is genetic).

I ask him a question, "do you consider yourself fit?"  He responds yes, I am very strong.  "Lets see how fit and strong you are with a fitness test, would you like to do a fitness test?"   So I asked him to do 10 slow and controlled full pushups, he could only do two.  We then did slow and controlled single leg lunges, he could only perform two.  Then we attempted to do 10 sit-ups, with much strain he managed  zero.  I already knew his cardio was very poor simply by watching him mow the yard and walk the stairs.  I then asked him a serious question, "do your think you are as fit as the average 80 year old man?  "Yes" he replied.  "What about  the average 70 year old man?  He thought long and hard on that one and then replied with uncertainty, "Yes, I think so."  How about the average 60 year old man?  His reply was, "I don't know."   How does that make you feel I ask and he says, "not good."   I then ask him what he is going to do about it.  "I guess I need to work out more."   And I tell him that that is not the total answer, the problem is the foods you eat, you have put this weight on, these 100lbs, by eating the wrong foods.  Too much of the wrong foods and no exercise and the wrong state of mind=rapid weight gain.

I encouraged him to stop by my clinic and I would start him on a program at no charge.  He has yet to call for that appointment but I will continue to confront him  and wake him out of his 3 year trance so he does not follow in the health risk footsteps of mom (diabetic from obesity) and dad  (heart attack, stomach bypass).

Recipe: Mushroom Stroganoff


This was a nice quick little lunch I made for myself today- rich and creamy and satisfying- with a bit of a kick! Traditionally stroganoff is made with beef, but I remember mushroom stroganoff always being served as the vegetarian alternative in my school canteen. Had this with some rice, but it also awesome with chips, as well as great on the side of a juicy steak!

Mushroom Stroganoff (serves 1 as a main, 2 as a side)

30g butter
½ white onion, finely diced
2 garlic cloves, finely diced
180g chestnut mushrooms, diced
100ml sherry
½ tsp hot smoked paprika (plus extra for garnish)
120ml single cream
Splash of lemon juice
Salt and pepper
Finely chopped fresh parsley for garnish

1. Fry the onions and garlic in the butter for a couple of minutes. Add the mushrooms and cook for a further two minutes. Add the sherry and paprika, and cook on a high heat for 5 minutes.
2. Add the cream, lemon juice, and plenty of seasoning, and cook for a further 5 minutes, stirring often. Serve, garnished with a load of fresh parsley and a sprinkling of smoked paprika.

#21) From FAT to FIT in 10 weeks

Oh boy!  Final 10 week weigh-in on a gentleman, age 53, 5'6" tall and start weight 200lbs.  He carried most all his weight in his belly, what I call a liver body type profile.  His face was puffy and his history was slow weight gain over the years with several "weight loss"  attempts along the way, at the urging of his wife.  But nothing worked for him and he gave up, what is the use if nothing works?

He came in to see me initially for his bad back.  Within a month his low back was perfect but in the process of my back treatment with him, I was able to discuss my slim down program and its benefits.  He was encouraged by what I had to tell him and he started the Weight loss for Life program immediately.  His health picture was not good and he understood that the meds he was taking for high blood pressure and the Lipitor for high cholesterol and the purple pill for acid reflux was not the answer .

His final weigh in after 10 weeks put him at his ideal weight at 155.  His body fat had dropped remarkably and his muscle mass was now normal and his visceral fat also sitting in normal range.  He had lost 45 lbs. in 10 weeks for an average of 4.5lbs per week.  The average loss rate for men is 5 to 7 lbs. per week.  His was lower as he had a few "cheat" days early on but he error corrected himself to following the program precisely.

And guess what, his doctor has reduced his BP meds to near nothing and expects him to be able to discontinue the medication.  He was able to stop the Lipitor with great new blood tests and he no longer has the acid reflux, actually his acid reflux stopped when he lost his first 30lbs.  He has great energy, sleeps the best ever he says and libido of a youngster he brags to me (more info than I need to know).  He is doing light exercise, mainly walking and light weights at home. He understands how to maintain weight loss for life and his body now provides him with a new and improved metabolism for burning fat.  Another success case and absolute transformation.  He looks 15 years younger, he looks fit.  I am very proud of his success and so is he.  Until next time, Dr. Mark Doyle

TIPS FOR STRETCH MARKS Many women’s develop stretch marks at various stages of their lives, especially during pregnancy. The best way to combat stretch marks is to prevent their formation. If you put on weight fairly suddenly on any area of your body, you are likely to develop stretch marks. Stretch marks can thus occur at any time, but they are most common during pregnancy. A woman's stomach stretches greatly to accommodate her growing baby. Her breasts grow as well, thus leading women to develop stretch marks on these areas.
Body Lotion 
Apply body lotion all over, not just on your arms. Don't forget your tummy and breasts they need lotion the most.  Don't wait until you are pregnant or until you start planning a baby before applying lotion. Start today. Do this every morning, after a shower. Your pores are still open, they are clean, and will be able to absorb the moisturizer well.
Massage 
Regular oil body massages help keep your skin nourished and supple. Coconut oil is a good bet as it gets absorbed fairly easily. Start with body oil massages before pregnancy, and speak to your doctor about continuing them during pregnancy. You could gently massage your tummy with oil yourself.
Water 
Water hydrates the skin from within, and if you have been drinking enough water everyday, chances are that you have well nourished, supple skin, which will be able to bear the impact of your pregnancy without developing marks.
Weight Gain 
You should gain around 12 to 14 kgs during your pregnancy. If you are under weight for your height, you could gain a couple of extra kgs, while if you are over weight, you should aim for gaining a few kgs less, depending on how overweight you are, and on what your doctor says.

Hair Style Tips


Hair Style Tips are important to every one in life. There is some tips to care your hair.
  • Cut your hair frequently. It is better to trim a minimal amount of hair often than it is to cut off a whole lot once a year, as your hair stays in healthier condition.  
  • Never use a blow dryer on dry hair.
  • If you want a change of style but want to keep the length, get your hair cut in long layers. This also helps remove split ends. 
  • Always use rubber bands that are covered with fabric when you want to tie up your hair. This reduces breakage. 
  • Natural bristle brushes are preferable to plastic and polyester bristles. They are gentler on the hair.  Unless your brush has natural bristles, you should never brush wet hair, as wet hair tends to snap easily. 
  • Move the blow dryer along the length of your hair along with your brush.  
  • If your hair is very curly, it helps if your blow dryer has a flat nozzle attachment to better direct air. 
  • Stick to making sections with the help of horizontal and vertical partings to your hair, and doing blocks at a time. 
  • Wearing a conditioner at all times keeps the hair moisturized and also helps prevent damage caused by exposure to sunlight.
  • Divide the loose hair into two sections, and blow-dry each section with the help of a round brush.


Recipe: Pork Mince Pie


I never knew how cheap pork mince was- it's even cheaper than beef in fact, £2 for 500g!?! That's insane! I cooked this for my brother and one of his mates that he had round, i went over to cook for him as our parents are currently away in Sharm El Sheik and so Michael is left all on his own. And he can't cook a damn thing- seriously, he can't even open a tin!!! He's been surviving off pot noodles and scotch eggs ever since theyve been away i think. This was a very filling and substantial meal, that kept both me and two hungry teenage boys happy. The pie can be a little messy when it comes to serving, as the mince kinda falls out everywhere, but the flavour is fantastic!!

Pork Mince Pie (serves 3/4)

3 tbsp olive oil
1 white onion, finely diced
1 garlic clove, crushed
½ tsp marjoram
500g pork mince
2 tbsp Worchester sauce
2 generous teaspoons English mustard
Salt and pepper to taste
1 sheet ready rolled puff pastry sheet
Milk or beaten egg to glaze

1. Fry the onion, garlic and marjoram in the olive oil, for 10 minutes, stirring often. Increase heat to high, add the pork mince, and cook for a further 5 minutes. Add the Worchester sauce and mustard, and cook for another 5 minutes. Season to taste and set aside to cool.
2. Preheat the oven to 200C. Put the pastry sheet on a baking tray lined with greaseproof paper. Cut the pastry in half, pile all the mince mixture onto one half, and top with the other half. Crimp the pastry at the edges, and cut a couple of holes in the top of the pie to avoid soggy pastry.
3. Brush with beaten egg or milk, and bake in the oven for 25 minutes. Serve!

1. First you must pluck eyebrows before bedtime so any redness will go overnight. In shaping your eyebrows make use of your facial features.
2. Then use a pair of slant edge tweezers which hold hairs without difficulty. Comb hairs one way and after that other to remove loose hairs.
3. You should pluck hairs involving the brows and any stragglers. Do not remove the hairs from above your eyebrows.
4. Pluck all hair separately close to the root. Work in the way of the growth.
5. Always stay away from over plucking. In defining your eyebrows select a shade close to your natural hair color.
6. When using a pencil you must apply in small, feathered strokes. When starting at the interior corner work outwards.
7. Blend the color with a brush. To tame stray hairs simply use hair gel and comb through to neaten.

Recipe: Sweet Potato and Chilli Bean Pie


This is sooo scrummy! A really comforting lunch that I made this damp and dreary Easter monday. Theres something very comforting and nice though about being all cosy and warm with a big bowl of food indoors, whilst looking out at all the cold rain outside. I feel a bit scared about the next couple of months though, ive got so much Uni work to do! I', having to write a 2000 word lab report on making a smoothie. Yeah i'm actually not joking!! I tend to serve this dish with some sour cream or herby yoghurt, as it does have a slight kick to it!

Sweet Potato and Chilli Bean Pie (serves 4)

20g butter (plus extra for the mash topping)
2 tbsp rapeseed oil
1 white onion, diced
1 garlic clove, finely chopped
1 green chilli, finely chopped
Large handful fresh coriander, chopped
1 leek, diced
1 carrot, diced
1 celery stick, diced
½ tsp garam masala
1 x 41g Schwartz Chilli con Carne recipe spice mix
1 tin tomatoes
1 tin kidney beans, drained and rinsed
Pinch of sugar
2 large sweet potatoes, peeled and diced
Salt and pepper to taste
Splash of milk
1 tsp cumin seeds
15g finely grated parmesan

1. Sautee the onion, carrot, garlic, chilli, celery, coriander and leeks in the oil and butter for 20 minutes, covered, stirring occasionally. Meanwhile, bring a large pan of water to the boil, and boil the sweet potatoes for about 25 minutes, or until soft.
2. Add the garam masala, chilli spice mix, tomatoes, and kidney beans to the vegetable mixture and stir until well combined. Season to taste, and pour into a baking dish, and smooth over until even. Preheat the oven to 200C.
3. Drain and mash the sweet potatoes with some butter and a little splash of milk, until the mash is smooth. Top the kidney bean mixture with the sweet potato mash, smooth over, and create a lined pattern with a fork on top of the mash (this helps the topping to get crispier).
4. Top evenly with the cumin seeds, and then the grated parmesan, and bake in the oven for 30 minutes. Finally, put under a hot grill for about 5 minutes or until the top has browned and has turned slightly crispy. Serve!

Recipe: Macaroni Cheese


I expect that every family has their own take on the classic dish that is macaroni cheese. It's simple, tasty, cheap, and very easy to make. Some people add bacon, or roasted tomatoes- some versions even include beef, or red wine! Had a disastrous attempt at making one about a month ago using red wine and smoked bacon- actually ended up tasting revolting- Cheers metro recipes for making me waste a load of nice ingredients! My mum makes a really nice version with mushrooms, and cheese sauce made with wholemeal flour, thats very interesting too. This version has three different cheeses in it, which I think just gives it a great savoury edge (but lets not think about the calorie count, ey!). I served this with some delicious new season asparagus, just steamed with a bit of lemon butter on top.

Macaroni Cheese
250g macaroni
40g butter
40g flour
500ml semi-skimmed milk
½ tsp dried oregano
¼ tsp crushed garlic
100g grated red leister cheese
15g finely grated parmesan
Salt and pepper to taste
100g grated cheddar

1. Preheat the oven to 200C. Cook the macaroni in boiling water, according to it’s packet instructions. Meanwhile, make the white sauce (like you would normally) with all the other ingredients, except the cheddar cheese.
2. Drain the macaroni and add it to the cheese sauce. Stir to combine well, season to taste, and pour into a large baking dish. Top with the cheddar cheese, bake in the oven for 30 minutes, and then serve!

Recipe: Sundried Tomato and Basil Frittatas


This is another canape recipe that I will be making for my friends birthday party next week, and it's a very quick and simple variety to make. I was surprised how much a lot of these "frittatas" rose, almost like souffles, but they settle down once you get them out of the muffin tin and onto a plate or tray. This recipe can also be a fantastic filling for a full-sized quiche.

Sundried tomato frittatas (makes about 36)

12 medium eggs
60g finely chopped sundried tomatoes
1 tsp dried basil
Black pepper and a little salt
Butter (for greasing)

1. Preheat the oven to 200C. In a mixing bowl whisk the eggs well. Add all other ingredients to the beaten egg.
2. Butter/ grease all the individual holes in two mini-muffin tins. Spoon the egg mixture 2/3rds into each hole (do not pour, as this will mean the later fritatas will have more sundried tomato than egg mixture, as the sundried tomato sinks to the bottom of the mix).
3. Bake in the oven for about 14 minutes, or until fully cooked. Plate and consume either hot or cold.

Recipe: Asian tomato and rice soup


I had to make another rather quick dinner, from the bits and bobs we had in the house last night, before rushing off to a comedy show, so i made another rather nice soup! It's almost a fusion dish really, with tomato not really being added to many chinese/ asian dishes, but it is absolutely scrummy- sweet, tangy and a little bit spicy! If you cant find the wiltshire chilli farm sauce, any sweet chilli sauce of some sort will do!

Asian Tomato and Rice Soup (serves 2)

2 tbsp rapeseed oil
½ white onion, diced finely
1 garlic clove, diced finely
½ red chilli, finely diced
1 tsp tomato puree
1 tsp crushed ginger
1 tsp ground coriander
1 x 400g tin chopped tomatoes
1 tsp sugar
1 litre vegetable stock
40g The Wiltshire Chilli Farm Fruity chilli sauce
40g basmati rice
Salt and pepper to taste
Freshly chopped coriander for garnish

1. Sautee the onion, red chilli and garlic in the rapeseed oil for 5 minutes, stirring often. Add the ginger, tomato paste and ground coriander and cook for a further 2 minutes.
2. Add the tomatoes, sugar, stock and chilli sauce, and boil for 10 minutes. Add the rice and cook on a high heat for a further 12 minutes. Season to taste, garnish with fresh coriander and serve!

Nestlé: An 'eggsample' of redesigning Easter packaging



It's that time of year when traditionally the confectionery industry comes under fire.

"Too much plastic," we cry, as we open those boxes that protect the chocolate egg and its other sweet contents, and despite the reduction of packaging in recent years, an article in last week's Guardian, revealed that there are manufacturers, particularly those associated with the luxury end of the market, that are still not doing enough to rid us of the plastic crud that comes with our chocolate egg,

So it was interesting when Nestlé's press team got in touch last week, to see if I fancied checking out their latest packaging. If that saves me the embarrassment of poking about with my magnifying glass amongst the supermarket aisles, how could I decline such an offer.


I've been aware of Nestlé's reduction efforts for the last four years, since my interest in waste began.  However, the company has been redeveloping its packaging since 2006, with the aim of making its entire Easter egg packaging 100% recyclable. During this time, the company has made great inroads into the 3,000 tonnes of Easter packaging waste.  The branded mug range represents the final set of products to be tackled, helping Nestlé achieve its goal and saving 48 tonnes of plastic in the process.

For a consumer with a geeky interest in waste reduction, Nestlé's work in this area has been a really positive step, especially when it comes to plastic, because even now, many local authorities across the UK still do not collect this material for recycling.  By switching to alternative 100% recyclable materials, Nestlé states that it will save 726 tonnes of plastic waste each Easter.


So what has Nestlé done exactly? The key shift has been redesigning its products so that it doesn't have to rely on plastic to protect the egg. Designing out waste at source is one of the first goals of moving to a Zero Waste future. An example can be seen here, where FSC certified card is now used to secure the mug and confectionary inside the box.

However, the branded mug range still incorporates some plastic in its packaging, but this is compostable film, which is used for the windows.

Nestlé's latest announcement prompted me to have a browse along the supermarket aisles to see what other manufacturers are up to and it was great to see that competitor Cadbury's has also gone down the route of replacing plastic packaging with basket-shaped card.  But as last week's Guardian article claimed, there is still a lot of plastic rubbish still being distributed around the country, contributing to 3,000 tonnes that ends up in landfill.

Of course, despite the positive news from Nestlé, and the other fact that the company has incorporated a 30% reduction in packaging overall, that compostable window still niggles me. Such is the risk of sending such packaging to a Zero Waste geek.

I will happily separate that fillm and see how it breaks down under the auspices of the composter in my back garden, but what concerns me is how many other consumers will follow suit?  Will they notice and if so, will they be bothered? And of course not everyone has a home composter, for which this material is intended.

At least Nestlé includes clear instructions on what to do with the materials, so the lesson to us all is to keep a close eye on labelling, no matter what we buy.

If that is the lesson for us, the consumer, perhaps the lesson for Nestlé then, is to redesign its packaging even further to remove the need for compostable plastic, possibly shrinking the size of the windows in any product that currently needs such protection.

But I know I'm picking at bones here. Nestlé has taken a leading role within the industry by lightweighting its packaging and switching to recyclable materials and it's time that other manufacturers should follow suit.  And while they're at it, perhaps the industry can also come up with an alternative solution for that ubiquitous plastic film which either litters landfill or is poor carolific fodder for EfW.

Ouch, I think this waste-geek needs some chocolate.  

It's just a shame it's all gone.

Well that is the risk that comes with opening up the Munchies Easter egg box to assess the packaging.

And with all this talk of chocolate, I'm now regretting donating the accompanying Kit Kat and Yorkie boxes to our school's Easter Egg Bingo.
